This was a happy recipe accident.
I needed a quick lunch for the boys on Saturday.
I had an extra pizza crust in the frig and pork carnitas in the freezer from this post.
And this pizza was born.
It was declared “awesome” by all that partook.
Super yummy, quick and satisfying.
And yes, I am on a “the other white meat” bandwagon now.
Pork carnitas for President!
Tex Mex Pork Carnitas Pizza
Preheat oven to 425°
- 1 pizza dough, unbaked
- 2 tbsp hot sauce (we like Garlic Texas Pete)
- 4 tbsp crushed tomatoes (or diced tomatoes are fine too)
- 4 tbsp salsa
- 1/2 tsp sugar
- 1 cup pork carnitas approx
- 1 cup Monterrey jack cheese, shredded (regular ol’ mozzarella would work too)
- fresh cilantro
To assemble the pizza:
Combine the hot sauce, tomatoes, salsa, and sugar. Set aside.
Grease a pizza pan. Stretch the pizza dough across the pan. Evenly spread the hot sauce mixture over the pizza crust. Then evenly spread the carnitas and cheese over the hot sauce mixture.
Bake at 425° for 15-18 minutes or until crust is golden brown.
Top with fresh cilantro.
Enjoy.
Tip for refrigerated pizza dough: Whether the instructions specify or not, I always like my dough to sit out on the counter for at least an hour before I start to work with it. It really makes the texture of the pizza crust chewy , and it sure makes it easier to work with.
