So I was perusing the aisles of Trader Joe’s not long ago and this “recipe” was born.
I created this meal out of a dire need to satisfy my appetite with limited calories, very limited calories.
Miso Ginger Broth,
Frozen Broccoli
and Thai Shrimp Gyoza(like shrimp egg rolls wrapped in rice paper).
That’s it. Oh and throw some soy sauce, Sriracha, or even some sesame oil in there if you like that sort of thing.
That’s it.
And guess what the calorie count is for a BIG bowl of this delicious soup.
23(1.5 cups miso stock)+200(4 gyoza)+25(1 cup broccoli)= 248 calories
And to top it off it takes 3.5 minutes to make.
Miso Soup with Broccoli and Shrimp
1 serving
Ingredients
- 1.5 cups Miso Stock (look for it with boxes of stock or in the oriental section of the grocery store)
- 1 cup frozen broccoli florets (or chopped fresh kale, spinach or bok choy)
- 4 frozen shrimp gyoza (or 1/2 cup cooked diced chicken, frozen cooked shrimp, or tofu)
Optional
- soy sauce
- Sriracha
- sesame oil
- green onion
Place 1/4 cup of the stock, and all the broccoli and gyoza in a microwave safe soup bowl. Cover with a napkin or paper towel and heat for 1.5 minutes in the microwave(this will steam the broccoli and gyoza). Pour the rest of the stock in the bowl and heat for 2 additional minutes. Enjoy!
This is microwave cooking at its finest:)
I am having this for dinner tonight for the 4th time in two weeks! It’s so tasty!
Happy Tuesday!
