I am a huge fan of the blog Foodie with Family.
I love her approach to food and recipes.
She really makes “from scratch” cooking easy.
And from scratch cooking is my favorite cooking method because then I know what’s really in my food.
Lastly, I love that her recipes really do appeal to kids.
Well last night after I succumbed to the first season of Downton Abbey, I grabbed a pork butt (pork shoulder) to cook overnight in my slow cooker.
Confession: I used to be really intimidated by large cuts of meat. That is until I realized the $ saving.
A 7lb pork butt is $8.
A 2lb package of chicken breasts is $8.
You do the math. It is incredibly cost effective to cook large cuts, chop or shred them, freeze them and then use them for all sorts of recipes.
I used Rebecca’s recipe for Slow Cooker Spicy Cola Pulled Pork. Spicy and sweet. It’s the perfect combination.
I put all the ingredients in the slower cooker, turned the timer on for 9 hours; and I woke up this morning to a house smelling of pork goodness.
Then before work, I put the roast in the refrigerator to cool.
When I get home tonight after work, I will drain the excess fat off the meat, shred it and place it in freezer bags.
And then I will have a freezer armory of spicy pork goodness to add to BBQ pizzas, quesadillas, sandwiches, enchiladas etc all for $8 plus a few ingredients.
